As you might have guessed, after a long, hot day in the kitchen, we like to unwind with a refreshing cocktail. But, liquor is also a great additional to recipes, too.
Check out this Grilled Margarita Chicken.
- 8 oz of your favorite margarita mix
- 2 oz Tequila, we like 100% agave, but any will do
- 1 tablespoon(s) garlic minced
- 4 chicken breast, boneless, skinless
- Salt to taste
- Black Pepper to taste
Pound the chicken to create an even thickness so it will cook evenly. Season with salt and pepper. Combine the margarita mix, tequila and garlic. Immerse the chicken in the marinade for 2 hours. Remove from the marinade, taking care to dry the chicken. Grill on medium with a closed grill for 10-20 minutes, turning once. Chicken is done when it reaches 165 degrees on an instant-read thermometer.
