I grew up in an Italian Irish family, so food has always been my epicenter. As a young child, I learned to pick ripe vegetables and fruits from my grandfather and uncle who lovingly tended an enormous backyard garden.

Before long, I was rolling meatballs with my mom and making orecchiette with my great grandmother. I didn’t ask Santa for dolls or dresses. I wanted a hamburger griddle and cooking utensils. Early on, I developed a passion for great food prepared with quality ingredients and knew the joy that shared meals can bring.

By the time I was in my 20s, I would cook five-course gourmet meals on the weekends, imitating recipes I watched on PBS on Saturday mornings. Cooking was always fun — until one day it wasn’t.

Several years ago, I was diagnosed with the autoimmune disorder, Hashimoto’s Thyroiditis. Under the care of my endocrinologist, I grew steadily sicker despite taking my prescription. I was exhausted all the time, my hair was falling out, I had insomnia and hot flashes. After researching, I decided to change my diet. And THAT changed my life. I became gluten, soy, and dairy-free and eliminated other trigger foods from my routine. In a matter of weeks, I was feeling like my old self again and had more energy, growing back my hair, and experiencing more restful nights. I knew at this point, that I had found a truly unique “medicine” that I wanted to share with others.

I founded The Pickled Beet™ to help you live your best life by nourishing your body with exactly what it needs. Whether you’re healthy and want to stay that way,  you’ve been diagnosed recently with a disease, or you are struggling with food allergies or sensitivities, we can help by preparing meals that you just can’t wait to eat.
